Campano of origins, but the Marches of adoption and in fact, Umberto Bentivoglio began to approach the kitchen as a boy and then began his studies to become a Chef. Many important experiences along the way, many alongside starred chefs such as the Spigaroli brothers, Moreno Cedroni, Roberto Fiorini and finally the starred chef Carlo Cracco. Umberto prefers fish, passion inherited by chef Roberto Fiorini, while chef Emanuele Mazzella, from the Vespasia restaurant, teaches him all the techniques of meat processing, transmitting his love for this product that has a strong tradition in the Marche. The secret of this young Chef, of great creativity and imagination, but also of great technique, is knowing how to innovate continuously, always looking for new horizons to explore in the kitchen. Each course, in fact, preserves in itself the memory of its origins but lives again with new light, because it is reinterpreted with character and personality.
